Discover Peru's culinary scene from Lima, The Culinary Capital of Latin America, to Cusco

Peruvian food and topography go hand in hand. Using what pachamama (mother earth) gave them, the Peruvians have developed a cuisine that combines local and international flavors. The coast provides an abundance of fresh seafood, the Andean highland, potatoes and the Amazon rainforest, delicious seasonal fruits. Small wonder that Peru is one of the world's emerging foodie hotspots.

Day 1 - Lima
Your Peruvian adventure begins with an afternoon walking tour of the capital city. You'll explore the historic, colonial district before hitting Lima's Central Market, where you'll get a first-hand look at the fresh building blocks of Peruvian cuisine. The walk will also give you the chance to experience Lima's excellent downtown street food offerings.
Day 2 - Lima
The day begins with a visit to the wonderful Chorillos seafood market. Select your catch of the day, then make a beeline to a local market restaurant for a masterclass in the preparation of Peruvian cebiche (citrus-cured fish) and cicharron (fried fish) that will serve as your brunch. The afternoon is yours to explore. In the evening, visit the beachside district of Barranco, and enjoy a guided tasting of Peru's national spirit--pisco.
Day 3 - Cusco
Take a morning flight with LATAM Airlines Peru to Cusco (approximately 1 hour). Stroll down the cobblestone streets and discover the town's interesting combination of Spanish and Inca cultures. A guided walk in the afternoon will take you to San Pedro market, where you can peruse the abundance of fresh avocados, potatoes, peppers and more.
Day 4 - Cusco
Today you'll join a workshop that's all about Peru's most beloved agricultural products – the cocao bean. Go on a journey from bean to bar, starting with the harvest, fermentation and drying of the cacao beans all the way through to the preparation and setting process. Finish it off with a much-awaited tasting. The chocolate is delectable.
Day 5 - Sacred Valley
Travel by private bus through the Sacred Valley (approximately 2 hours) on the outskirts of Cusco. Visit a local restaurant with a wood-fired horno (oven) and enjoy delicious empanadas, straight from the oven. Sit down to a lunch of the local specialty, “cuy” (guinea pig), prepared in a traditional manner. Arrive in Ollantaytambo in the early evening.
Day 6 - Aguas Calientes
After a guided exploration of Incan ruins in Ollantaytambo, you'll travel by train through the winding Urubamba Valley to Aguas Calientes (approximately 90 minutes).Take a late-afternoon cooking class at Rupa Wasi Tree House, one of the most innovative restaurants in Aguas Calientes. Visit the local market to collect ingredients, then learn to cook a range of regional dishes. Then sit down to feast on the fruits of your labor.
Day 7 - Machu Picchu
Rise early for a morning tour of one of the wonders of the world, Peru's legendary Machu Picchu. Take in not only the amazing views but the fascinating history of the lost Incan city as your local guide takes you through some of the 200 buildings, houses and temples. Board a train back to Ollantaytambo (approximately 90 minutes).
Day 8 - Sacred Valley — Cusco
Return to Cusco for your final Peruvian feast, an ancient cooking ritual known as "pachamama." This cooking method dates back to the time of the Inca empire and is still popular today. A variety of meats are marinated in spices then placed in a huatia (earth oven), often with a selection of root vegetables. Buried in the ground and covered with hot stones, the meat and vegetables are left to cook slowly in the earth. This is your chance to feast like the Incas. 
Day 9 - Cusco
Your adventure comes to an end after a final breakfast. And while the Peruvian feasting may be done, the memories you've collected on this trip will feed your spirit for years to come.
